People buy organic food for various reasons, and while not all our customers are especially concerned with food miles it is very much in the ethos of box schemes to focus on local and home grown produce where possible. We’re pleased to announce then, that this week’s veg boxes are 100% UK grown and hope to be able continue this for the next few weeks as there’s so much lovely produce around at the moment. With the holiday season upon us, and with many of you now harvesting veg from your own gardens, please give us as much notice as you can of cancellations, and on the subject of holidays there will be no ‘box news’ for a fortnight as we’ll be a bit short of staff here.
I have a feeling this might mean ‘eggs and courgettes’ in Egyptian*. This is a light, gentle and very tasty dish that works well with other more robust flavours; a spicy tomato sauce for instance. Gram flour is made from chickpeas and is available from the shop
You can cook several at one time, flipping them over after ½ a minute to briefly cook the other side. The mixture makes about 12 small ‘pancakes’, enough for 4 people.
The spinach that we send out in the veg boxes is usually ‘beet’ or ‘perpetual’ spinach. It’s a very similar plant to beetroot and when the leaves on the bunches of beetroot are in good condition they make a very fine spinach substitute. ‘True’ spinach is a more tender leaf; the sort that you find in packs of baby leaves. It’s more tricky to grow and harvest.
*NB One of our customers who knows has commented: You're close! It means eggs with courgettes (Coussa means marrow).
