Matt has been working on his window display this morning and these bright summer sunflowers certainly add to that holiday feeling - make you want to get out there and chill in the garden.

English Strawberries are at their absolute peak at this time of year, and although I didn't take a picture of them we have the first English Cherries in this week, too. Paler than the European varieties, they have started a bit later than usual so it'll be interesting to see how the season progresses.
An Apology to you and a breadmaking lesson for me!
We have an apology for our Cat Lane Malted Grain customers who will have come looking for bread this morning - a momentary lapse of concentration yesterday meant that I forgot to add the salt to the recipe.
This produced a very sticky dough. Salt retards the action of the yeast in the dough and consequently this did not happen which led to the dough "over-proving" overnight. As the dough proves the gluten is stretched by the gases released in the fermentation process - if the dough overproves the gluten stretches too far and then collapses back on itself. The finished loaf ends up resembling a lumpy brick although the texture within the loaf itself is perfectly adequate.
In the heat of summer we have had one or two problems with the bread overproving. I took this odd looking loaf home for lunch and while it looks very sad it tastes as good as ever!
