Big Crunchy Peanut Cookies

Dave brought some of these cookies into the shop yesterday - it was my day off.  Heather says they were delicious - it was my day off.  There aren't any left today but Dave thinks they were so nice I should put the recipe up on the website so that others can enjoy them too.  Hmmm thanks guys.  I find I can't recommend these cookies as I HAVEN'T TRIED THEM!

Dave found the recpe in a book called Vegan with a Vengeance, by Isa Chandra Moskowitz.  The recipe claims to make 12 "huge ass" cookies but Dave found the amounts below made about 36 of a more "standard ass" size... so really it's up to you how big you like your cookies.


  • 225g plain flour
  • 175g rolled oats
  • 2 tsp baking powder
  • 1 tsp salt
  • 175ml rapeseed oil
  • 175g crunchy peanut butter (about 12 tablespoons) 1kg tubs Meridian Peanut Butter
  • 200g granulated sugar
  • 225g brown sugar
  • 125ml vanilla soya milk (or plain)
  • 2-3 tsps vanilla extract 


  1. Preheat oven to 180C/350F/Gas Mark 4.  Lightly grease two baking sheets
  2. Mix the flour, oats, baking powder and salt in a large bowl
  3. In a separate bowl mix the oil, peanut butter soya milk and vanilla extract.
  4. Add the dry ingredients to the wet and mix.  the dough will be very firm and moist.
  5. Break the dough into even-sized lumps of your choice and roll them into firm balls in your hands
  6. Place them on the prepared baking sheets well spaced out.
  7. Flatten them out using the base of a jam jar or a rolling pin.
  8. Bake for 8 to 15 mins, depending on size, until the cookies have risen a little and are golden brown.
  9. Allow to cool on the baking tray for 10 mins before attemtping to move them to a cooling rack.
