Share a Recipe - Jack’s Recipe #2 Green Glory!

When Jack submitted this recipe he used his family phrase to describe it that seemed, quite frankly, rather unflattering, and perhaps a tad off-putting, so I have taken the liberty  - with his permission - of attaching a different epithet to it "Glory"

  • 1 Onion
  • 1 courgette
  • 1 clove garlic, crushed
  • ginger, finely chopped or grated
  • a spice of your choice (smoked paprika, cumin, coriander?)
  • 1 pack of plain tofu (280g) clear spot tofu
  • lots and lots of frozen spinach  - (I reckon resh spinach would work too, it cooks so quickly.  Ed: Chris)
  • 1 teaspoon of marmite
  • lots of soy sauce


  1. Fry the Onion, garlic and ginger
  2. Throw in spice of your choice and grate the courgette into the pan
  3. Add the tofu and break it up
  4. Add lots and lots of frozen spinach
  5. Season with the marmite and lots of soy sauce to taste
  6. Fry until it looks like Green Glory but tastes amazing
