Bea Marshall - web-designer extraordinaire - has been cutting a dash in her kitchen too and thought you might like to try her summer fruit cake recipe.
She writes:
"i made enough for two cakes.
i made it up as i went along so i hope i remembered everything!...
Ingredients
1/2 block butter
half jar runny honey
2 or 3 glugs date syrup
8 eggs
6 grated apples
3 or 4 chopped nectarines
3 or 4 glugs olive oil
punnet blackcurrants
3 or 4 handfuls oats
half and half SR flour and bran
1/2 pint milk
flowers from 3 or 4 lavender spears
handful of raisins
handful of linseeds
2tsp bicarb of soda
Instructions
1/2 block butter - melt in a pan and transfer to large mixing bowl.
whisk in:
half jar runny honey
2 or 3 glugs date syrup
then whisk in:
8 eggs (one at a time)
then mix in:
6 grated apples
3 or 4 chopped nectarines
3 or 4 glugs olive oil
punnet blackcurrants
then mix in:
3 or 4 handfuls oats
half and half SR flour and bran (until you have firm but not stiff cake mixture)
in a pan warm up:
1/2 pint milk
flowers from 3 or 4 lavender spears
handful of raisins
handful of linseeds
when near boiling turn off heat and add 2tsp bicarb of soda
pour this mixture into cake mixture
pour into greased and lined tins.
bake at 150c for an hour or so - until the skewer comes out clean.
my loaf cake took 1 hr and my big round cake took 1 hr 30 i think.
it's lush!"
