It's considered a little unusual to cook lettuce in this country, but this vivid green and fresh tasting soup makes good use of the battered remnants of a large one. Use either frozen peas or the fresh that are just coming in now. They don't have to be really tender and sweet; in fact the tougher mealy ones give the soup a really nice texture It can be served warm or chilled.
300g green lettuce shredded
1 medium onion finely sliced
300g peas, fresh or frozen
750g vegetable stock
a small handful of fresh mint
50ml single cream
Gently fry the onion in the butter until soft but not too coloured.
Add the peas and stock and simmer for 5 minutes.
Add the lettuce and mint and cook for a further 2 minutes.
Add the cream and blend until smooth.
Season well with salt and pepper and reheat gently.
